    Protein-Packed Pumpkin Overnight Oats: Easy, Nutritious Breakfast

    As the temperature drops in the sun comes up later in the day having a cozy breakfast to look forward, can help you through your day. With October coming, you think of pumpkins. Pumpkin pie, pumpkin cake, pumpkin cookies, and now pumpkin overnight oatmeal. This recipe is so easy and will surely help you in the early morning rush. If you are trying to get more protein into your diet, you can add a scoop or two to this recipe. Vanilla protein taste the best.

    If you are not into adding protein to your meal, you can delete the protein and just continue with the recipe.

    Ingredient:

    1/3 cup of pumpkin puree

    1/3 cup of plain or vanilla Greek yogurt

    1/3 cup of vanilla almond milk or the milk of your choice

    1/2 to 1 tablespoon of chia seeds

    1/2 teaspoon of pumpkin pie spice or cinnamon

    1/2 teaspoon of vanilla extract

    sweetner of your choice 2 to 3 teaspoons of maple syrup is very delicious, but you can use, honey, sugar or Stevia

    1 or 2 scoops of protein powder

    Toppings If desired. Raisins, Craisins, shredded coconut granola, nuts, or nut butter.

    Ready to make?

    You will want to combine all the ingredients except the topping in a small bowl or a jar with the lid. You can use a leftover jar from something else or a small mason jar. You can also make this in a bowl and just cover it with plastic wrap. Cover and refrigerate overnight for for at least four hours.

    You can enjoy this pumpkin overnight oatmeal breakfast or you can eat it for lunch cold or gently warmed in the microwave For about 30 seconds increments, then you sprinkle your desired topping and add a little milk if desired. You can also take it out of the refrigerator for about 10 minutes before you're ready to eat it it's chilled, but it's not so cold.

    I usually quintuple the recipe to prep for the whole week for myself. These will stay fresh for five days in the refrigerator. Remember, do not add your toppings.
