KNOXVILLE, Tenn. (WATE) — The eatery with the low score is located in Knoxville’s Hardin Valley area. The inspector checked off 15 violations in his report.

The grade is a 71 at Chef’s Asian Cuisine at 106-12 Hardin Valley Road. The 71 is a passing grade, just barely as a grade of 69 and below is considered failing.

Two uncovered containers of cut raw chicken were found on the floor under the food preparation table. Numerous other food items were found on the kitchen floor, walk-in cooler and freezer floors. All foods must be kept at least six inches off the floor.

Soiled wiping clothes had been left on various counters in the kitchen. They’re supposed to be kept in a sanitizer bucket. Several dented cans of food were found in the dry storage room. Dents along the seams can potentially break the seal and spoil the food.

No date marking system was in place. Prepared foods that are held for 24 hours or more make must have a date of first use marked on the product. No guessing as to when it was prepared is allowed. The inspector also wrote cooking equipment, containers used to store foods, and shelving were dirty throughout the restaurant.

In a follow-up, the inspector returned to Chef’s Asian Cuisine, he checked the critical violations, and they had been corrected. The new grade is 90.
