    This week’s featured recipe is a delightful, healthy meal for summer that makes the most of the season’s fresh produce. A highly adaptable recipe that can easily incorporate vegetable or protein substitutions. Not a chicken fan? Swap out freshly grilled shrimp or beef tenderloin as you wish. This is also terrific with goat, parmesan or blue cheese, depending on your preference.

    Summer Grill Bowl

    Ingredients:

    • 2 cups fresh arugula
    • 2 grilled chicken breasts, sliced
    • 2 tablespoons balsamic vinegar
    • 1 cup cooked brown rice
    • 1 red bell pepper, grilled and sliced
    • 1 zucchini, grilled and sliced
    • 1 cup corn kernels (grilled or cooked)
    • 2 tablespoons pesto
    • 1/2 red onion, thinly sliced
    • 1/2 cup crumbled feta cheese
    • 1 cup cherry tomatoes, halved

    Instructions:

    1. Prepare the Ingredients:
    2. Grill the chicken breasts until fully cooked, then slice into strips.
    3. Grill the red bell pepper and zucchini, then slice them.
    4. Cook the brown rice according to package instructions.
    5. Grill or cook the corn kernels.
    6. Thinly slice the red onion.
    7. Halve the cherry tomatoes.
      1. Assemble the Bowl:
      2. Start with a base of fresh arugula in a large bowl.
      3. Add a scoop of cooked brown rice.
      4. Arrange the sliced grilled chicken on top.
      5. Add the grilled bell pepper and zucchini.
      6. Sprinkle the corn kernels over the bowl.
      7. Place a few dollops of pesto around the bowl.
      8. Add the thinly sliced red onion.
      9. Crumble the feta cheese on top.
      10. Finish with the halved cherry tomatoes.
        1. Finish and Serve:
        • Drizzle the balsamic vinegar over the entire bowl.
        • Toss gently if desired or leave as is for a visually appealing presentation.
        • Serve immediately and enjoy your fresh, healthy summer grill bowl!
