This is an easy summer recipe that can be made on a traditional grill, a griddle or inside in a cast iron pan if it’s just too hot to fire up the barbecue. Feel free to play with the vegetable combinations or add diced chicken or steak for added flavor. Perfection!
Grilled Vegetable Quesadilla
Ingredients:
2 large flour tortillas
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, thinly sliced
1 zucchini, sliced into rounds
1 tablespoon olive oil
Salt and pepper to taste
Optional: sliced jalapeños, chopped cilantro
Instructions:
Grill the Vegetables:
Preheat your grill to medium-high heat.
Toss the sliced bell peppers, red onion, and zucchini with olive oil, salt, and pepper.
Grill the vegetables until tender and lightly charred, about 3-4 minutes per side. Remove from heat and set aside.
Assemble the Quesadillas:
Lay one tortilla flat and sprinkle half of the shredded cheese evenly over the tortilla.
Arrange grilled vegetables over the cheese.
Sprinkle the remaining cheese on top of the vegetables.
Place the second tortilla on top to cover the filling.
Grill the Quesadillas:
Carefully transfer the assembled quesadilla onto the grill.
Grill for about 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted.
Slice and Serve:
Remove the quesadilla from the grill and let it cool for a minute.
Cut into wedges using a pizza cutter or a sharp knife.
Serve hot with homemade guacamole on the side.
Homemade Guacamole
Ingredients:
2 ripe avocados, peeled and pitted
1 small tomato, diced
1/4 cup red onion, finely chopped
1 clove garlic, minced
1 lime, juiced
Salt and pepper to taste
Optional: chopped cilantro, diced jalapeño for spice
Instructions:
Prepare the Avocado:
In a medium bowl, mash the avocados with a fork until smooth or chunky as desired.
Mix Ingredients:
Add diced tomato, red onion, minced garlic, lime juice, salt, and pepper to the mashed avocado.
Mix gently until well combined.
Adjust Seasoning:
Taste and adjust salt, pepper, and lime juice according to your preference.
If desired, add chopped cilantro and diced jalapeño for extra flavor and heat.
Serve:
Transfer the guacamole to a serving bowl.
Serve alongside the grilled vegetable quesadilla.
