    Cozy up with a bowl of Chicken Parmesan Soup, a hearty twist on the Italian classic. This rich tomato-based soup is loaded with tender chicken, melted mozzarella, and flavorful Parmesan for a comforting, cheesy meal. Topped with fresh basil and served alongside garlic bread, it’s the perfect dish for cool nights when you’re craving something warm and satisfying.

    Chicken Parmesan Soup:

    Ingredients:

    • 2 tbsp olive oil
    • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
    • 1 small onion, diced
    • 3 garlic cloves, minced
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • 4 cups chicken broth
    • 2 cups marinara sauce
    • 1 can (14 oz) diced tomatoes
    • 1 cup uncooked pasta (small shapes like shells or ditalini)
    • 1 cup shredded mozzarella cheese
    • ½ cup grated Parmesan cheese
    • Salt and pepper to taste
    • Fresh basil for garnish

    Instructions:

    1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5-6 minutes. Remove and set aside.
    2. In the same pot, add diced onions and cook until soft, about 4-5 minutes. Stir in garlic, oregano, and basil, cooking for 1 minute until fragrant.
    3. Add chicken broth, marinara sauce, diced tomatoes, and cooked chicken. Bring to a boil, then reduce heat and simmer for 15 minutes.
    4. Stir in pasta and cook until tender, about 8-10 minutes.
    5. Add shredded mozzarella and Parmesan cheese, stirring until melted and creamy. Season with salt and pepper.
    6. Serve hot, garnished with fresh basil and a side of garlic bread.
