    Restaurant Road Trip: Lightburn’s Restaurant

    ROANOKE, W.Va. (WBOY) — For this week’s Restaurant Road Trip, 12 News’ Jordan Massey headed to Stonewall Resort to check out Lightburn’s Restaurant located along the top of the Arnold Palmer Signature Course.

    The restaurant operates on a seasonal schedule, opening up in late May and remaining open through the end of New Year’s Eve each year. According to Stonewall Resort’s Food and Beverage Director Joe Corcoglioniti, Lightburn’s features some of the most pleasurable dining on the resort.

    “We are People’s Best View out of all 50 states, and we are also OpenTable’s Diner’s Choice Award this year,” said Corcoglioniti.

    Corcoglioniti added that the culinary team at the restaurant tries to keep things unique by offering different things to their guests throughout the year. He said that some things they do at Lightburn’s Restaurant include seasonal pairings and murder mystery events. He added that the resort also offers other late-night entertainment for adults, such as pool parties.

    In addition to that, the restaurant has some bourbon pairings coming up. Corcoglioniti said that soon, the restaurant will be featuring Jefferson’s Bourbons, bringing in a representative from the company.

    Restaurant Road Trip: The Canteen

    “We also pair those,” Corcoglioniti stated. “So the chef will take the bourbons and take that taste, they’ll pair it with a very unique food for a dining experience for the guest.”

    According to Corcoglioniti, the restaurant will also be bringing in Yellowstone bourbon products later in the year for “a big adventure,” and these bourbons will come in right before the premiere of Yellowstone’s fifth season in November.

    During 12 News’ visit, Lightburn’s Restaurant presented reporter Jordan Massey with an impressive spread to showcase some of its different menu items. Staff provided Massey with a three-course feast featuring different appetizers, entrées and a dessert.

    Appetizer-wise, the restaurant presented a smoky poblano cheese soup, smoked brie with jalapeño cherry jam and fried onions, as well as fried green tomatoes with blue cheese and bacon.

    For dinner, Massey was given a cherry jalapeño-glazed chicken and florentine ravioli with an alfredo tomato sauce, as well as the feature sandwich: Birdies and Bacon, designed for golfers—an option Corcoglioniti said is the restaurant’s most popular item.

    To top it all off, the staff provided 12 News with an extra large slice of chocolate cake. You can try some of these menu items out for yourself at Lightburn’s Restaurant, which can be found at 940 Resort Drive in Roanoke, West Virginia.
