Curuba Colombian Kitchen is in the works at 1546 E Stacy Road in Allen. A related filing with the Texas Department of Licensing and Regulation estimates an pen date sometime next spring.

According to a not-yet-populated Instagram page, Curuba will bring “fresh, hand-crafted dishes” and “authentic flavors made with love.”

While the specific menu is not yet released, traditional Colombian cuisine is a vibrant tapestry of flavors and ingredients that reflect the country’s diverse culture and geography. Each region boasts its own specialties, from the hearty bandeja paisa, featuring beans, rice, ground meat, chicharrón, and plantains, to the coastal ceviches rich in fresh seafood. Corn is a staple, seen in dishes like arepas and tamales, while potatoes are celebrated in variations like ajiaco, a comforting soup.

Colombian meals often emphasize fresh, local produce and a balance of textures and tastes, showcasing the influence of Indigenous, African, and Spanish culinary traditions. This rich culinary heritage invites exploration and appreciation, making Colombian food a delightful experience for anyone willing to savor it.

Customers can expect authentic food and service at the spot next spring.
