sway Opens In Aspen

sway, the restaurant known for its innovative take on traditional Thai cuisine announced the grand opening of its Aspen location on February 7, 2024. Situated at 308 E. Hopkins Avenue, the new outpost of sway promises to deliver the same dining experience that has captivated patrons in Austin, Texas since 2012, with some thoughtful updates to interiors and offerings that cater to Aspen sensibilities.

sway Aspen, a collaboration between New Waterloo and Aspen-based Infinite Hospitality, features a blend of tradition and innovation in its design, conceptualized by architect Michael Hsu. The restaurant has an intimate dining room, bar seating, patio to come post-opening, and an inviting ambiance. For the introduction of sway to Aspen, Hsu aimed to craft an intimate space that fuses Thai culinary traditions with the natural beauty of the Rocky Mountains. sway’s Aspen location is a carefully designed space.

“We are so excited to welcome the New Waterloo team to Aspen and could not be more thrilled by the sway opening,” says Infinite Hospitality COO, Sean Robison in a statement. He continued, “Lotus Margaritas and delicious Panang Neua Short Rib Curry, here we come!”

The menu brings many of the same longtime dishes that have made sway a household name to an Aspen audience, such as the Son-In-Law, Tiger Cry, and Salt + Pepper Tofu. Other favorites include Prawn Miange and Thai Basil Eggplant.

Designed to complement the culinary menu’s fragrant, spicy and complex offerings, sway’s beverage program features signature cocktails like the cooling Monk Water, with watermelon & mint, and Lotus Margarita with a tamarind rim, in addition to house-made sodas and drinking vinegars, beer, sake and a more extensive and elevated wine selection than found at its Austin counterpart.

sway will be open daily from 4 to 10 p.m. MT for dine-in and takeout.
