Sugar Salt Sand is gearing up to bring life back to a long-vacant rooftop patio in Old Town Fort Collins. Owned by Erin and Jon Banis, who also run the beloved Japanese restaurant Japango, this new eatery will be on the second floor above that business, at 125 S. College Ave.

The concept promises to deliver a refreshing tropical experience inspired by the couple’s culinary adventures around the world. It will be a relaxed, fun dining experience with an experimental menu inspired by the cuisines of Baja California, the Caribbean, and Hawaii.

Guests can expect a range of dishes, including ceviches, poke, and fresh fish options, as well as a cocktail menu led by the experienced team from Japango. Signature drinks will include tropical favorites like Mai Tais and Mezcal Margaritas.

In a recent Instagram post, the brand teased, “Something beachy is about to breeze into Old Town Get ready for a vacation from the ordinary with our brand-new rooftop eatery concept, Sugar Salt Sand! While the idea for a restaurant that captures some of our favorite flavors and most cherished family memories has been in the back of our minds for years, it wasn’t until we found a home for Japango Fort Collins that we serendipitously also discovered the perfect venue to bring that idea to life…just a short flight of stairs away.”
