Floza Bringing Sourdough Craft Pizza to Palm Beach Gardens

Situated on PGA Boulevard alongside the Florida Turnpike in Palm Beach Gardens , Mirasol Walk will soon welcome a new craft pizza concept into its restaurant and retail community. Floza Craft Pizza will open in business center, at 6271 PGA Blvd., Unit 207 , according to a submitted plan review.

“It’s going to be wood-fired sourdough pizza—Napolitan-style, of course,” owner Erwin Toribio told What Now on Friday. “We don’t use commercial yeast; it’s a naturally fermented and raised leavening. That’s much more digestible that the commercial yeast everyone has a reaction to.”

Toribio is opening Floza in collaboration with business partner Edward Sherwood . The two restaurateurs have about 30 years’ combined experience, with a collective CV that ranges from pizza innovation (Toribio was part of a team that created an award-winning pizza menu at Grato ) to New York fine dining.

Toribio says pizza varieties will include both tried-and-true classics, along with innovative and trendy seasonal flavor profiles that will depend on the fresh ingredients available from local farmers and other producers at a given time. In addition to a seasonal menu, Floza will serve beer in wine, all in a space that seats just over 32 people, with some additional outside seating.
