The transformation from closed coffee shop to vibrant Mexican restaurant was unveiled last Thursday as El Mariachi opened in Williamston in the former Giddy Up Coffee location.

The restaurant is the company’s sixth location.

The vibrant colors on the outside of the eatery, noticeable from either direction as travelers approach on West Boulevard, depict the enthusiasm of the staff and the vibrant flavors of the new menu.

The restaurant celebrated its ribbon cutting with local officials gathering to welcome Williamston’s newest business.

Restaurant Manager Rolando Valencia was happy about the opening and his staff.

“We are very excited to be opening in Williamston. The community has been wonderful and the staff is anxious to open. We have worked very hard to make this happen,” said Valencia.

The entire location has been remodeled from floor to ceiling and from kitchen and bathrooms. The company added life to a building that had been calling for a facelift since its closing. They accomplished that task.

The outside colors are festive while the inside of the new restaurant reflects softer tones offering a calming, relaxing atmosphere.

While the atmosphere is calming, the menu immediately teases the palate, offering interesting and often adventurous entree selections.

The menu reflects the flavors of Mexico and have been part of the family’s recipes in the other El Mariachi Restaurants in Jacksonville, Bellhaven and Washington.

Tacos, enchiladas and burritos are standard items, however the selection of entrees includes seafood, steak, chicken and pork dishes.

The seafood side of the menu features many dishes with Tilapia and shrimp. A few feature octopus. The fried Queen Tilapia is another featured dish.

“I found El Mariachi to be very inviting, Great service, and nice people. The food was awesome, as well as the atmosphere the place gives out. I’m looking forward to my next trip there, which will be real soon,” said Jeremiah Taylor, who attended the ribbon cutting ceremony.

Martin County Chamber of Commerce Executive Director April Cooper was equally enthused.

“Wow, I am so impressed with the staff, food, decor, everything about this business was on point. I wish them much success,” said Cooper.

El Mariachi is the most recent business to call Williamston home. Last week, Tienda Sinai opened on East Main Street.

Over the past year downtown Williamston has played host to a new record company, a coffee shop, an ice cream store and a tea room. While Schewels furniture is moving next month, its new location next to Piggly Wiggly is slated to offer customers a larger showroom and a contemporary shopping experience.

El Mariachi will begin serving liquor soon, according to management and will offer Happy Hour specials. The restaurant is open from 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. until 11 p.m. on Friday and Saturday and 11 a.m. until 9:30 p.m. on Sunday.
