    Elka Bee’s delays opening of Wilsonville location

    Residents will have to wait a little longer for Elka Bee’s Coffee & Bakery to open in Wilsonville.

    The Clackamas-based Elka Bee’s, which will soon open a new location in the former Corner Coffee Shoppe location near Safeway, has pushed its opening back from August to October. Owner Sylvia Hartman said she decided to do more renovations to the space than originally planned, causing the delay.

    Hartman said she wants the appearance of the Wilsonville location to be more consistent with that of the Clackamas location. In a previous interview Hartman described the shop as homey with a European feel.

    “I like brightness and color,” Hartman said. “And (the space) doesn’t feel like that to me.”

    Hartman looks forward to the shop coming to Wilsonville, and said people have reached out to express their excitement She previously said she was not looking to open a new location for Elka Bee’s, but decided to move forward when the opportunity arose.

    “I’m glad I went through with it and decided to do this project, because I really would love for Wilsonville to have something unique and different, that is not anywhere else,” Hartman said.
