Trina Williams cut the ribbon for her new business, Fresh Wind Catering, on Wednesday morning outside the offices of Youngstown Collaborative. The mobile restaurant will specialize in heart-healthy food and signature recipes including vegetable lasagna, Youngstown famous chicken and fried rolls.

She said she has been cooking for others from home for 30 years but started a catering business in 2015 thanks to help from Collaborative’s director Pat Kerrigan.

He said bring some food by. I brung food by. He looked at his secretary and he said, ‘listen, get her a business card and a catering page’ and the rest is history,” Williams said. “I never thought about catering or selling these gourmet rolls — it was just a hobby.”

Williams will now be among the contestants in next month’s “Shark Tank” event with the Youngstown Business Incubator and hopes to eventually grow the business with additional food trucks around the area.
