    Cooking with John: Ribeye Steak Bites with Cowboy Butter with Alabama Cattlemen’s Association

    MOBILE, Ala. ( WKRG ) — This week on Cooking with John , John Nodar is right at home in the WKRG Kitchen, where Josie Jones, director of consumer outreach, from Alabama Cattlemen’s Association is making Ribeye Steak Bites with Cowboy Butter.

    Ribeye Steak Bites with Cowboy Butter

    Ingredients:

    • 2 16oz. Ribeyes
    • 12 ounces Ground Beef (93% lean or leaner)
    • Cowboy Butter
    • 1 stick butter
    • Zest & juice of 1/2 lemon
    • 4 cloves garlic, minced
    • 1 tablespoon Dijon mustard
    • 1/2 tablespoon dried thyme
    • 1 teaspoon soy sauce
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon chipotle chili powder
    • 1/4 teaspoon red pepper flakes
    • 2 tablespoons chopped parsley
    • Salt and pepper

    Directions:

    • 1. Heat cast iron skillet over medium-high heat, until hot.
    • 2. Season both sides of the steak with salt and pepper. Place in hot skillet and leave for 3 minutes. Flip and cook other side for 3 minutes, or until desired doneness.
    • 3. Remove from heat and let rest.
    • 4. In a small pot over medium heat, melt butter. Add lemon zest and juice, garlic, Dijon mustard, thyme, soy sauce, smoked paprika, chipotle chili powder, red pepper flakes, parsley, and salt and pepper to taste. Simmer for 30 seconds, then remove from heat.
    • 5. Cut steak into bite sized pieces. Toss in Cowboy Butter or serve to dip.
