Just when you thought an ice cream sandwich couldn’t get any more delicious, the brioche gelato sandwich comes along and changes everything. This upgraded version of the frozen treat you know and love swaps a brioche bun for cookies, giving it a buttery flavor that complements the scoops of creamy ice cream or gelato stuffed inside. These sandwiches (also called brioche con gelato) are popular in Sicily, especially during summer as a treat for dessert or even breakfast. (Dessert for breakfast? Sign me up!) Keep reading for pointers on making the ultimate brioche ice cream sandwich.
What is a brioche ice cream sandwich?
This sandwich originated in Sicily , where it’s made by filling a brioche bun with scoops of gelato. You can use any flavor of gelato such as sweet vanilla, decadent chocolate or nutty pistachio, or combination of each. Also, ice cream is fine to use in place of gelato. While it’s the perfect dessert to beat the heat, it can also be enjoyed for breakfast — which is an unexpected yet delicious way to start the day!
The difference between brioche buns and regular buns
Brioche buns are a step above regular burger buns because eggs, milk and butter are added to the dough. This gives the baked good a richer flavor and more caramelized crust. You can find brioche buns in the bread aisle or make them from scratch and then transform them into delectable ice cream sandwiches.

Easy trick for nailing perfectly round scoops of ice cream
You think that running your ice cream scoop under hot water helps you form even mounds of ice cream or gelato. But, the gurus at Art of Gelato Michelangelo note otherwise as it may cause the frozen treat to melt slightly. Instead, they suggest dipping the scoop into lukewarm water so you can easily pull the ice cream without affecting its texture.
Once the scoop is formed, place it into the bun. Before forming another scoop, dip the tool into the water and wipe off any excess liquid. Watch their video below for more on why this trick works.
This simple method for whipping up a brioche con gelato comes from @flavorsbyale. She uses scoops of pistachio and nocciola (hazelnut) gelato for this treat. To avoid a messy sandwich, she slices the brioche bun halfway through the middle so the gelato doesn't drip out of the other end. However, if your buns are pre-sliced, simply wrap the treat in a small sheet of parchment to catch any spills. Also, you can customize your sandwich by topping it with berries, chopped pistachios or powdered sugar for extra sweetness.
