I’m always on the lookout for easy weeknight meals that deliver big on flavor yet won’t break the bank. That’s why I love this Kielbasa and Veggie Skillet recipe. With just a handful of ingredients, it’s quick to prep. Plus, it cooks up in one pan so cleanup is a cinch. Best of all, at just $1.98 per serving, it’s easy on the wallet.

Sautéing root vegetables caramelizes natural sugars that adds a nutty note. We cook carrots at medium-high heat then remove them. Then we sear kielbasa and onion in the flavored oil. The sausage releases smoke-infused juices while the onion browns. Then the mild cabbage takes on all that umami goodness for super satisfying bite. Chive cream cheese stirred in at the end melts into a rich sauce to finish the dish. Cook along with our video and watch how easy it is. Then leave a comment below.

    • 2 carrots
    • 1 (13 oz.) pkg. turkey kielbasa
    • 1 small head cabbage, trimmed
    • 1 onion, chopped
    • ¼ cup olive oil
    • ¼ tsp. salt
    • 4 oz. ⅓-less-fat cream cheese, at room temp.
    • 2 Tbs. sliced chives

    Instructions

Thinly slice carrots, kielbasa and cabbage, keeping them separate; reserve.

In 12" nonstick skillet, heat oil over medium-high heat. Add carrots and salt; cook, stirring occasionally, until tender, about 4 min. Remove carrots from skillet. Add kielbasa and onion to skillet; cook, stirring occasionally, until golden brown, about 10 min.

Add cabbage; cover and cook, stirring occasionally, until tender, 10–15 min. Meanwhile, in bowl, stir together cream cheese and 1 Tbs. chives; reserve. Return carrots to skillet; cook, stirring, until heated through. Serve topped with dollops of cream cheese mixture and a sprinkling of remaining chives.
