    Rich + Comforting Guinness Stew Recipe Is a Hearty Take On A Pub Favorite

    When the air turns brisk and leaves start to change into shades of crimson, gold and orange, I'm ready for cozy meals like soups and stews. I love to put a big Dutch oven on the stove and let it simmer while warm aromas fill the house. That's what inspired this Guinness Stew recipe. It preps in just 20 minutes. And it cooks up in one pot so cleanup is a breeze.

    We coat beef cubes in flour, then sear them. The flour creates crunchy bits on the bottom of the pot that add richness. Plus, browning the meat seals in juices ensuring it turns out fall-apart tender. We stir in beef broth and stout to help scrape up the brown bits, but you can simply sub in more broth for a non-alcoholic version. Then mushroom gravy mix is the easy secret to even more flavor.     Ingredients

    • 2 lbs. beef stew meat, about 1¼" pieces
    • 2 Tbs. all-purpose flour
    • ¼ tsp. pepper
    • 2 Tbs. olive oil
    • 1 (14.5 oz.) can low-sodium beef broth
    • 1 (11.2 oz.) btle. stout beer, such as Guinness
    • 1 (.75 oz.) env. mushroom gravy mix
    • 1 tsp. dried thyme
    • 8 oz. baby carrots, sliced ¼" thick
    • 1 Tbs. chopped fresh parsley

    Instructions

    In bowl, toss beef with flour and pepper until all sides of pieces are coated. In large pot, heat oil over medium-high heat. In batches, add beef and cook, turning occasionally, until browned on all sides, about 5 min. per batch. Return all of beef back to pot.

    Stir in broth, beer, gravy mix and thyme. Bring to a boil; reduce heat to low. Cover; cook, stirring occasionally, until almost tender, about 21⁄2 hrs. Stir in carrots. Cover; cook 30 min. Uncover; increase heat to medium-low. Cook uncovered until thickened and beef and carrots are tender, about 30 min. Serve sprinkled with parsley.
