    Fiesta Salad-Topped Meatloaf Recipe Is A Nachos-Inspired Spin On A Crowd-Pleaser

    Meatloaf is a go-to favorite at my house. It's pretty quick to toss together. And it's fun customize it with all sorts of different ingredients. That's what inspired our Fiesta Salad-Topped Meatloaf recipe. It's a Tex-Mex take on a classic cozy comfort food. Plus, it turns out so moist and delicious, it's bound to become a new any-time delight.

    In keeping with the theme, we replace the traditional breadcrumbs in the meat mixture with crushed tortilla chips, then add jarred salsa and corn kernels. Then instead of a baking dish, we press it into a springform pan so it cooks up looking like a cake. How fun is that! Now for the topping simply combine creamy avocado , juicy cherry tomatoes, herbs and lime juice. So yummy! Once you give it a try, send us a comment below.

    Ingredients

    • 2½ lbs. ground beef
    • 6 cups tortilla chips, finely ground, about 7 oz., from 11 oz. bag
    • 1 cup frozen corn, thawed, drained
    • 1 cup salsa
    • 3 eggs
    • 1 cup shredded pepper jack cheese, 4 oz.
    • 1 avocado, pitted, peeled, diced
    • 1 cup cherry tomatoes, quartered
    • 1 cup fresh cilantro leaves
    • ½ cup chopped red onion
    • 1 Tbs. lime juice
    • Sour cream and lime wedges (optional)

    Instructions

    Place rimmed baking sheet on center rack in oven; heat to 350°F. Coat 9”x3” springform pan with cooking spray; wrap outside bottom and side of pan with foil. In large bowl, combine beef, tortilla chips, corn, salsa and eggs; press into pan.

    Bake on rimmed baking sheet until cooked through or meat thermometer inserted into center reaches 165°F, about 1 hr., topping with cheese during last 15 min. of cooking.

    In bowl, combine avocado, tomatoes, cilantro, red onion and lime juice. Remove side of pan. Transfer meatloaf to serving plate. Top with avocado mixture. If desired, drizzle with sour cream and serve with lime wedges.
