    Quick-Prep Hearty Beef and Bean Burritos Recipe Is A Weeknight Dinner Winner

    Tex-Mex food is a favorite at my house. Seems like once a week we call the local taco joint and order take-out. It's fast and delicious, but it gets to be expensive. That's why this Hearty Beef and Bean Burritos recipe is a new go-to. With only a handful of ingredients it's ready to eat in just 30 minutes. Best of all, it cooks in one skillet so cleanup is a cinch.

    When cooking ground meat, it's key to get a good sear. It brings out rich complex flavor. The best way to do that? Cook the beef over medium-high heat without stirring until the bottom is nicely browned. That way the meat will sizzle instead of steam. Then all you need are taco seasoning, tomato and beans to bring the whole thing together. For a little extra decadence, feel free to top the burritos with your favorite melty cheese.     Ingredients

    • 1 lb. ground beef
    • 1 Tbs. taco seasoning
    • 1 tomato, diced
    • 2 Tbs. tomato paste
    • 1 (15.25 oz.) can kidney beans, rinsed, drained
    • 6 flour tortillas
    • Parsley sprigs and thinly sliced red onion

    Instructions

    Coat large nonstick skillet with cooking spray; heat over medium-high heat. Add ground beef; cook, stirring occasionally and breaking up meat with spoon, until browned, 7–8 min.

    Stir in seasoning, tomato, tomato paste and beans; simmer until thickened, 3–5 min. Remove from heat. Dividing evenly, spoon meat mixture onto centers of tortillas. Top with parsley and red onion; roll to enclose.
