    New China Family Restaurant, 565 S. Main St., Shrewsbury

    Violations (Inspector Comments):

    • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
    • Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between.
    • Observed unclean wet wiping cloths not being stored in sanitizer solution.
    • Observed cases of eggs and fresh broccoli stored directly on the floor in walk-in cooler, rather than 6 inches off of the ground, as required.
    • Observed food being stored in the freezer unit in plastic to-go bags there were made of non-food-grade materials.
    • Raw meat observed thawing at room temperature in warewashing sink, which is not an approved thawing method. (Corrected.)
    • Refrigerated ready-to-eat, time/temperature control for safety food – sauces, cooked rice, cooked chicken, egg rolls, soups and stocks prepared in the food facility and held for more than 24 hours, are not being dated marked.
    • Food facility is not making up cleaning and sanitizing solutions in manual warewashing.
    • Manual warewashing equipment observed with build-up of filth and food residue and not cleaned before use, and frequently throughout the day.
    • Observed food employee using manual warewashing sink for food preparation/thawing without sanitizing before use.
    • Observed fryer equipment, as well as floors below, wall behind, and hoods above, encrusted with grease and soil accumulation.
    • Non-food contact surfaces including interior of refrigerator units, door handles, floors throughout the facility, not cleaned at a frequency to preclude accumulation of dirt and soil.
    • Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use.
    • The food facility does not have a functional handwash sink located in the food prep/warewashing area. The sink handles were broken and the water had been turned off.  (Corrected. Facility repaired handles and turned on water.)
    • Front and back doors of the food facility are not self-closing and were being propped open. (Corrected. Front door was closed. Back door had a screen which was utilized.)

    Sac Shop, 111 Limekiln, Fairview Township

    Violations (Inspector comments):

    • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
    • Observed four half-gallons of Galliker's chocolate milk dated 6/24/24, which expired the previous day and should have been pulled from the refrigerated shelf.
    • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.
    • Food employees using manual warewashing sink as a handwashing sink, as evidenced by hand-washing soap being located at the 3-bay sink area.
    • Coffee urns/equipment, too large for mechanical or manual warewash compartments, was not disassembled for adequate cleaning. Observed manual ware-washing three-bay sink with accumulation of filth, chemical bottles in sink, and food, and is in of cleaning before use to wash equipment.
    • Soap was not available at the handwash sink in the three-bay sink area.
    • Mops are not being hung to air dry.

    Smokey Bones Bar and Fire Grill, 1301 Kenneth Road, West Manchester Township

    Violations (Inspector comments):

    • The Person in Charge did not demonstrate adequate knowledge of food safety as evidenced by this non-compliant inspection.
    • Foods, pans, single service items stored directly under ceiling tiles that are deteriorated. The coating is flaking off the tiles.
    • Hood System/smoke extraction system is not adequate to remove heat and/or smoke, as evidenced by dense smoke throughout kitchen and smoker area.
    • Microwave interior splash guard is not in place. This unit should not be used until all parts are properly installed. Either gasket or door handle of the middle hot holding unit on the cook line is not allowing for door to close properly and allowing for heat to escape.
    • Multiple food utensils stored as clean observed with accumulation of old food residue and were not clean to sight and touch in the prep area. (Corrected. Moved utensils to dish area to be washed.) Top interior of the far left microwave with accumulation of dried-on food residue and in need of cleaning.
    • Exterior of the ice machine in the smoker room with accumulation of food splatter and in need of cleaning.
    • The handwash sink located in the Men's, Women's room area does not have water at a temperature of at least 85 degrees Fahrenheit.
    • Plumbing system not maintained in good repair. Observed plumbing leaking at the handwashing sink in the dishwashing area.
    • Trash receptacle/waste handling unit outside does not have a tight-fitting lid or cover. Doors/lids were ajar.  (Corrected.)
    • Exterior of the ice machine in the smoker room with accumulation of food splatter and in need of cleaning.
    • Ceiling tiles throughout the kitchen area with brown staining, peeling, and in need of replacing.
    • Ceramic tile floor throughout kitchen area is damaged, tiles broken and missing, grout is deteriorated, creating areas that are not cleanable where food crumbs and liquids pooling. (Repeat violation.)
    • Observed more than 15 fruit fly-like insects in the bar area near the beer taps.  Facility does have pest control and is actively treating this area.
    • Walls and ceilings throughout the kitchen, preparation, and storage areas of the food facility are extremely dirty, dusty, food splattered, and in need of cleaning.
    • Fan guards in the walk-in cooler are dusty, dirty, and in need of cleaning.
    • Food facility unable to provide documentation for procedures, monitoring of critical control points, and corrective actions in the HACCP plan submitted to and approved by the Department. No adequate documentation could be provided. Person in Charge did not understand critical control points, monitoring corrective actions, and verification. Cooling temperatures, reheating temperatures, thermometer calibration, no employee HACCP Training documentation is documented as HACCP plan requires.
