During our trip to Lexington, we made a stop at Josie’s Restaurant for a quick breakfast, and it turned out to be one of the highlights of our morning. The cozy side seating area was perfectly shaded, providing a comfortable and relaxing spot to enjoy our meal. One detail that really stood out was the cold bowl of water they had set out for the pups—a thoughtful touch that made us feel right at home and showed just how much they care about their guests.

I started my morning with a cup of coffee, which was rich and smooth, exactly what I needed to get the day going. But the true star of the breakfast was the Eggs Benedict, Florentine style. I’ve had the classic version countless times, but this Florentine twist might just be my new favorite. The fresh spinach and roasted red peppers added a vibrant burst of flavor that took the dish to another level. The eggs were poached to perfection, and the hollandaise sauce was silky and flavorful, tying all the elements together beautifully.
