    A familiar chef is opening a 10-table seafood restaurant this fall in Lake Norman

    Chef Jonathan Cox, who has led kitchens at Dogwood, Fin & Fino and Chapter 6 for Rare Roots Hospitality, is striking out on his own to open a new seafood restaurant.

    This fall, Cox will open Seaboy Restaurant and Bar in the Lake Norman community of Cornelius, focusing on “good food, community and sustainability.”

    The 10-table restaurant will “ensure each dish receives the attention it deserves, making every visit feel like a part of the community we’re proud to be in,” its website reveals. “We believe in keeping things simple and honest, and we’re here to make sure every visit feels special.”

    Until the restaurant opens, Cox will remain with Rare Roots.

    “We are sad to see him go, but we’re excited for what the future holds for him,” Jon Dressler, co-owner of Rare Roots Hospitality, said in a news release. “Jonny has always shown top shelf creativity, work ethic, and drive and he will be missed.”
