    Vintage Grandma's Citrus Cake: A Family Favorite

    Growing up this cake was a dessert my Grandmother made and we just loved it. Serve it plain, dusted with powdered sugar, topped with fruit and cream, or iced it was something to look forward to after dinner. Every time she made it we couldn't wait to devour it, the smell was truly a vanilla and citrus aroma that hit you right in the face when you walked in the door. This cake sure didn't last long.

    Sometimes she would change it up and add a bit of orange juice and zest or add extract to make it orange orange-flavored cake. Lemon or orange it's fabulous in flavor and all made from scratch.

    Shopping List:

    • 1 1/2 cup sugar
    • 1/2 cup butter or margarine, softened
    • 2 eggs
    • 2 1/2 cups all-purpose flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup milk
    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon extract or orange extract
    • Optional: 1 tablespoon or more of grated lemon or orange zest (add more for a robust citrusy flavor)

    Directions:

    1. Preheat oven to 350 degrees and flour and grease two 8-inch pans or use a loaf pan and you may have extra batter for a smaller cake.
    2. Note: you can also make cupcakes
    3. Beat together into creamed mixture alternately with 1 cup milk plus 2 tablespoons milk.
    4. Bake in the greased and floured pans for 25 to 30 minutes or until a toothpick comes out clean when inserted in the middle.
