    Cabbage is one of the healthiest cruciferous vegetables that you can find at the grocery store. Cabbages of all colors are very healthy and full of antioxidants. They also contain vitamin C and vitamin K.

    Most people eat cabbage raw, cooked, or fermented into sauerkraut. It’s a very versatile vegetable. But, you can also juice cabbage!

    You can use red cabbage, purple cabbage, or green cabbage in this juice recipe. All have similar health benefits and flavor.

    • 1/2 of a medium red or purple cabbage
    • 2 red apples (I like Fuji apples for this recipe)
    • 1 cucumber, sliced
    • 1 lime, peeled and sliced
    • 1 1/2-inch piece of fresh ginger, peeled
    • 1 cup water (if using a blender to make the juice)

    Instructions

    1. Cut the cabbage, apple, and cucumber into large pieces that will fit through the feeding tube of a juicer. If you will be using a blender to make your juice, then cut your produce into smaller pieces than if you are using a juicer.
    2. If you are using a juicer, then run the vegetable and fruit pieces through the juicer. Collect the juice in a pitcher and serve immediately.
    3. If you are using a food processor or blender, add the cabbage, apple, cucumber, lime, ginger, and water to the base. Blend or process on high for 20-30 seconds, or until the mixture is smooth.
    4. Then, pour the blended juice through a nut milk bag, squeezing it from the top down to drain the juice into a pitcher. Discard the collected pulp, or save it and use it for another purpose.
    5. Serve the juice immediately.

    Notes

    1. You can easily double or triple this recipe for more servings.
    2. Fresh juice is best served right after it’s made. But, it can be stored in a covered container in the refrigerator for up to 4 days.
    3. This juice is very versatile! Feel free to adapt the ingredients. For instance, you can include celery instead of cucumber. Mint is also a great addition. If you don’t want the juice to be sweet, feel free to leave out the apple.
