Local restaurant Elephant Thai moving locations in Colorado Springs

(COLORADO SPRINGS) — From street-style food to traditional dishes from Thailand, a local eatery is moving locations and hopes the community will continue to support its restaurant.
Chef Suwanna Meyer opened Elephant Thai in 2021 and told FOX21 News that the restaurant will be operating out of a new location beginning next month.
The current location at 3408 North Academy Boulevard will be moving just five minutes up the street to 4703 N. Academy Blvd. According to Chef Meyer, she began looking for a new location in 2023 and found the latest spot to be the perfect fit for Elephant Thai.
Chef Meyer also operates a second business in Colorado Springs, Chaang Thai , which has been in the community for 10 years and is located at 7525 N. Academy Blvd. Chaang Thai is also known for serving authentic Thai cuisine with gluten-free and vegan options at an affordable price.
“But not street food like Elephant Thai,” Chef Meyer added. “When I [opened] Elephant Thai, I wanted to make it different than Chaang Thai so I added street food items on the menu.”
After the Club Q shooting, nearby Elephant Thai, along with Chef Meyer and her team were instrumental in helping the community, serving hot meals to first responders and those who gathered in the area to remember the lives lost.
“I helped cook for police officers and people who visited the area at that time,” said Chef Meyer. “I do it from my heart to help police officers who work hard and I want to make people feel that they are not alone! I help without asking for anything back, but if those people love my food please come back to say hi and I will be very happy.”
Chef Meyer gave FOX21 a preview of what diners can expect including; more street food and northern-style dishes, some of which will be exclusive in town like Hang Le (Braised Pork in northern style curry), Nam Ngiao (Rice noodles in pork rib soup), Nam Ya (Rice noodles in fish and fish ball red curry sauce), along with monthly specials and a full bar.
“Plus the ambiance will be much more beautiful and elegant and there will be a nice patio for summer,” Chef Meyer added, who also shared a sneak peek of the new space with FOX21.
Chef Meyer said the new Elephant Thai location would open on Tuesday, July 2 at 11 a.m. and its current location will be closed beginning Saturday, June 22 to Monday, July 1 so the restaurant can complete its move.
