    Sweet Chili Thai Chicken Pizza

    Dough Ingredients:

    • 1 1/2 cups warm water
    • 1 Tbl honey
    • 2 Tbl olive oil
    • 4 tsp instant yeast
    • 1 1/2 tsp salt
    • 2 cups AP flour
    • 2 cups bread flour
    • Cornmeal

    Toppings:

    • 1/2 cup sweet chili sauce (storebought or recipe HERE)
    • 1 cup grilled or rotisserie chicken, cubed
    • 2 green onions, chopped
    • 1/4 cup red onion, chopped
    • 1/2 zucchini, sliced into 1/4" slices (about 1/2 cup)
    • 2/3 cup - 1 cup shredded mozzarella cheese
    • 1/3 cup shredded cheddar cheese
    • 1/2 cup diced fresh tomato
    • 2 Tbl chopped cilantro (optional)


    To make the dough, combine the water, honey, olive oil, yeast, salt, and 1 cup of flour in the bowl of an electric stand mixer fitted with a dough hook (or mix by hand in a large bowl with a spoon). With the mixer on low speed, gradually add the remaining flour until the dough pulls away from the sides of the bowl and forms a soft, smooth ball. Knead the dough for 3-4 minutes (add a few extra minutes if using whole wheat flour). Allow the dough to rest, covered, in the bowl until doubled in size (about 30 minutes).

    When dough has doubled, deflate and turn out onto surface dusted with flour or a flour cornmeal mix (3:1 flour to cornmeal) Dust roller lightly with flour and roll into a circle of about 1/2" thickness. Transfer onto a oiled pizza plate or cookie sheet dusted with flour cornmeal mix.

    Top with chili sauce and spread evenly up to 1/2" from edge. Top with chicken, zucchini slices, red and green onions, and diced tomatoes. Sprinkle mozzarella and cheddar cheese over top and sprinkle chopped cilantro if desired.

    For added kick, you can sprinkle some red pepper flakes and / or a drizzle of more chili sauce.

    Bake at 400 degrees until cooked through at edges are lightly browned. (about 15 minutes). Enjoy!
