    Ingredients for 2 sandwiches:

    • 1 boneless, skinless chicken breast
    • 1/4 cup dill pickle juice
    • 1 egg
    • 1/4 cup milk
    • 1/2 cup flour
    • 1 tablespoon powdered sugar
    • 1/2 teaspoon paprika
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon celery salt
    • 1/2 teaspoon cayenne pepper (Not required. Only if you want it spicy)
    • 1 cup oil for frying *
    • Brioche Buns
    • Dill pickle slices
    • Lettuce
    • Tomato
    • Special sauce (Below)

Place the chicken between plastic wrap and gently pound with the flat side of a meat tenderizer until it’s about 1/2 inch thick throughout. Cut the chicken into two evenly sized pieces. Marinate in pickle juice for 30 minutes to an hour (add a teaspoon of Tabasco sauce for a spicy kick).

In one bowl, beat the egg with the milk. In another bowl, combine the flour, sugar, and spices. Dip each piece of chicken into the egg mixture, then coat evenly with the flour mixture.

Heat oil in a skillet to 345-350°F, about 1/2 inch deep. Fry each chicken cutlet for 2 minutes per side, or until golden and fully cooked. Blot on paper towels and serve on toasted buns with pickle slices. For a deluxe sandwich, add tomato, lettuce, and a slice of pepper jack cheese.

    * Notes:

I like to use peanut oil to fry with, but you can use any good frying oil.

    To Make Secret Sauce:

    • 1/4 cup honey
    • 2 tablespoons yellow mustard
    • 1/4 cup barbecue sauce*
    • 1 tablespoon lemon juice
    • 1/2 cup mayonnaise

Whisk all in a bowl and enjoy! Store in a sealed container or condiment bottle in the fridge for up to 1 week.

    *Notes:

You'll want to use a bbq sauce that is sweeter. Kraft Honey BBQ, Original BBQ, or Sweet Baby Rays works well... or use another sauce brand with a similar flavor profile.
