    Creamy Pasta Salad

    This is a tasty and budget friendly side dish for any meal. Customize it with the veggies you have on hand and like. It is very adaptable.

    Here's what you'll need for 6, 1 cup servings:

    • 8 ounces salad macaroni or ditalini pasta
    • 1/4 cup very thinly sliced green onion
    • 1/2 cup black olives, sliced
    • 1 cup tiny broccoli florets
    • 1/2 cup diced cucumber
    • 1-2 stalks chopped celery, with tops
    • 1 large tomato, seeded and chopped
    • 1/2 cup mayonnaise
    • 2 teaspoons apple cider vinegar
    • 1/2 teaspoon kosher salt adjust to taste
    • 1/2 teaspoon freshly ground black pepper
    • 1/2 teaspoon sugar


    Cook the pasta according to the package instructions, adding a generous tablespoon of kosher salt to the boiling water. A few moments before the pasta is fully cooked, add the broccoli to the pot. Allow the broccoli to boil for about 30 seconds, then drain everything using a large colander. Rinse thoroughly with cold water to stop the cooking process.

    In a large mixing bowl, combine the mayonnaise, vinegar, salt, pepper, and sugar. Add the cooked pasta and broccoli, stirring well to ensure they are fully coated.

    Next, mix in the cucumber, celery, olives, tomato and green onions, stirring to combine. Taste and adjust the seasonings if necessary. Cover the bowl and refrigerate until ready to serve. Stir once more just before serving. Enjoy!

    *Note:

    If you forget to add the broccoli to the boiling water at the end of the pasta's cooking time, you can steam it in the microwave instead. Place the broccoli in a glass bowl with a tablespoon of water, and microwave for 60-90 seconds until it's bright green and slightly tender.
