    Easy Queso Blanco (White Cheese) Sauce

    Here's what you'll need to make about 6 servings:

    Ingredients:

    • 1 tablespoon unsalted butter
    • 1/4 medium white onion, finely diced
    • 1 clove garlic, minced
    • 1 cup whole milk, plus more as needed
    • 1 pound white American cheese, cut into small cubes
    • 1, 4 oz can diced green chiles
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon freshly ground ground pepper
    • Diced tomatoes and jalapeños, for garnish

    In a small skillet, melt the butter over medium heat. Add the diced onion and cook for 5-8 minutes, until softened and beginning to caramelize. Add the minced garlic and stir, cooking for an additional 30 seconds until fragrant. Remove from heat and set aside.

    In a medium saucepan, heat the milk over medium heat until small bubbles form around the edges. Lower the heat to a simmer.

    Gradually add the cheese cubes, about ½ cup at a time, to the warmed milk, whisking continuously until each batch is fully melted and incorporated. Keep whisking gently to ensure the queso dip becomes smooth and silky. Repeat this process until all the cheese is melted.

    Remove the saucepan from the heat and gently stir in the cooked onions and garlic, diced green chiles, salt, and black pepper. If the queso becomes too thick, add a little more milk and stir until it reaches the desired consistency.

    Garnish with chopped tomatoes and jalapeños, and serve with your favorite tortilla chips and enjoy!


    * Note:

    You can add more spice if you like yours hot. Add a pinch or two of cayenne or hot green chilies.

    You can also make this as thin or as thick as you want by adjusting the milk.
