Side Project's Cory King on what's new for the acclaimed Maplewood brewery
For a little over a decade, Cory King’s Side Project beers have been recognized as some of the best in the world, garnering a cult following for their funky, experimental brews and gaining international recognition in the process. (Rate Beer named Side Project the No.2 brewery in the world in 2020.) It seems that everything in the beer world that King and his wife, Karen, touch turns to gold. Side Project Cellar—their Belgian-inspired beer, wine and spirits bar—earned a 2015 James Beard Award nomination for Outstanding Bar Program under Karen’s direction. Add to this the culinary firepower brought to the table by Side Project’s executive chef Adam Altnether, who was named one of Forbes magazine’s “30 Under 30” in 2014. There’s no question that the Kings are at the top of the region’s—and the country’s—beverage scene. King is humbled by the acclaim and feels appreciative about Side Project’s success to date. Recently, though, he’s found himself thinking about his business in a different way: how to balance the brand’s reputation as a world-class brewery with a loyal following while making it approachable to the St. Louis drinking and dining public.
