    Country-Style Strawberry Shortcakes

    Make this Father's Day one to remember by treating your dad to a delicious strawberry shortcake. This classic dessert features a sweetened biscuit split in half and filled with fresh strawberries, then topped with a generous dollop of dreamy whipped cream and strawberries.

    Ingredients:

    • 1 cup evaporated milk, plus more for brushing
    • 1 teaspoon of pure vanilla extract 
    • 2 1/2 cups of self-rising flour
    • 1/3 cup granulated Splenda or sugar, plus more for sprinkling
    • 10 tablespoons of butter, cut into 1-inch cubes, and frozen. Plus 4 tablespoons of melted butter to brush over the dough
    • 1 pound of fresh strawberries
    • Whipped cream (homemade or store-purchased)

    Preparing the Shortcake Base

    In a bowl, mix together the flour and granulated Splenda or sugar.

    Cut in the butter until the mixture resembles coarse crumbs.

    Stir in 1 cup of evaporated milk until just combined.

    Drop spoonfuls of dough onto a greased baking sheet. Brush melted butter over the tops. Then sprinkle the tops with splenda or sugar. Bake in a 375-degree oven for 12 to 15 minutes, or until they are golden brown.

    Making the strawberry filling

    Wash and slice fresh strawberries.

    In a bowl, toss the strawberries with granulated Splenda or sugar and let them sit to release their natural juices.

    Assembling the Strawberry Shortcake

    Split the shortcakes in half horizontally.

    Spoon the strawberry filling over the bottom half of each shortcake.

    Top with whipped cream and the other half of the shortcake. Then add another dollop of whipped cream on the tops and garnish with strawberry halves.
