    Yummy Banana Pecan Bread Recipe

    Indulge in the delightful flavors of ripe bananas and crunchy pecans with this delectable banana pecan bread recipe. Perfect for breakfast or as a sweet treat, this moist and flavorful bread is sure to become a favorite in your household. Follow the simple steps below to create this irresistible baked good that will have your taste buds singing with joy.

    Ingredients:

    • 2 overly ripe large bananas
    • 1/2 cup of chopped pecans, plus about a 1/2 cup of whole pecans for the top of the bread
    • 1/3 cup of melted butter
    • 1 teaspoon of pure vanilla extract
    • 1/2 cup of granulated Splenda, or sugar, plus 4 tablespoons extra to sprinkle in the pan and on top of the bread.
    • 1 egg, whisked
    • 1 1/2 cups of sifted self-rising flour
    • 1 to 2 tablespoons of ground cinnamon

    Instructions:

    Grease a square pan, loaf pan, or bundt pan.

    In a small dish, combine 4 tablespoons of granulated Splenda or sugar with 1 to 2 tablespoons of ground cinnamon. Mix thoroughly. Lightly sprinkle the cinnamon mixture inside the greased pan, similar to dusting a cake pan with flour. Save the remaining cinnamon mixture to use as a topping for the bread.

    In a mixing bowl, smash two overripe bananas with a fork.

    Add the melted butter, granulated Splenda, or sugar, egg, and pure vanilla extract to the mashed bananas and mix well.

    Add the flour and chopped pecans, stirring until just combined.

    Pour the batter into the prepared pan.

    Next, sprinkle the rest of the sweetened cinnamon mixture over the top of the batter.

    Add additional whole pecans on top of the loaf in any design that you prefer.

    Bake in a 350-degree oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.

    Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

    Slice and enjoy!
