    Chocolate crinkle or pixie cookies.

    I do not know where chocolate crinkle cookies or pixie cookies originated, but they are certainly some of the best cookies around. It is rumored that a woman who was a close friend of “the Betty Crocker” had given her a crinkle cookie and Betty asked for the recipe. Another theory is that Crinkle cookies originated in the Philippines and the recipe became popular in the US. Their popularity is well deserved! Crinkle cookies are some of the best tasting cookies there are. This is my favorite recipe:

    Chocolate Crinkle Cookies

    Ingredients

    1/4 cup butter

    4 squares (1 0z. each) of unsweetened chocolate

    2 cups all-purpose flour

    2 cups granulated sugar.

    4 eggs

    2 tsp baking powder

    1/2 tsp salt

    1/2 cup chocolate chips

    Powdered sugar

    In a glass bowl melt butter in the microwave for 15 seconds and stir in unsweetened chocolate. Microwave for another 15 seconds and stir until smooth. Set the mixture aside and let it cool. In a large mixing bowl use an electric mixer to blend together melted chocolate, 1 cup flour, sugar eggs, baking powder, and salt. Beat at medium speed for 2 minutes, scrape bowl well and beat for another 2 minutes. Using a wooden spoon or rubber spatula stir in the remaining flour and chocolate chips. Scrape down the bowl and cover the mixture with plastic wrap. Refrigerate for at least 2 hours. or overnight. When ready to bake, heat oven to 350*. Use a cookie scoop and shape dough into round balls. Carefully roll the cookie balls in powder sugar until they are well coated. Bake on a greased cookie sheet 2 inches apart for 12-15 minutes until firm. Let the cookies cool slightly before removing them from the cookie sheet. Let them cool completely on a wire rack. Store in an airtight container. Makes about 4 dozen cookies,
