    Mexicali Quiche is a flavorful and delicious variation on the popular classic French Quiche, incorporating Mexican-inspired ingredients and flavors. It is a fusion of flavor from two continents and the results are a savory and unique dish.

    Mexicali Quiche

    8 oz, cheddar cheese

    3/4 cup salsa

    4 eggs

    1 1/2 cup half and half

    1 lb. ground beef

    salt and pepper

    parsley flakes

    2 pie crust (homemade or store bought)

    2 9” Pie pan or round pan. This recipe makes enough for 2.

    Directions

    1. Preheat the oven to 400* Brown the hamburger in a skillet, add salsa and cook for about 15 more minutes.
    2. Add the hamburger evenly between the pie crusts.
    3. Crack eggs into a large bowl, add half and half, salt, and pepper to taste and stir well. Pour the mixture evenly over the hamburger in the pie crusts.
    4. Cover the quiches with cheese and sprinkle with the parsley flakes.
    5. Bake for 20 minutes at 400* then reduce heat to 325* and bake for an added 20 minutes.

    The result is a flavorful quiche with a Mexican twist, perfect for brunch, lunch or even dinner. Serve with a side of salsa or guacamole.
