Vegan Column: Celebrating Independence day with vegan cookies
Baking has been part of my life since I was a little kid. I baked with my mom and both of my grandmas and we have many baking traditions in my family that I have shared with my daughter, particularly around the holidays. As a vegan baker, I am thrilled that there are so many yummy recipes to bake and that there are more options for ingredients for vegan baking, such as dairy-free butter and a number of egg replacements. I use Country Crock Plant Butter sticks as my go-to butter substitute. These can be found at Hy-Vee and Walmart. Ground flax seeds mixed with water to form a gel and aquafaba (the liquid from a can of chickpeas) are common egg replacements in baking. Ground flax seeds can be found in most grocery stores.

Outdoor Lighted Installations Welcome Summer at Fairfield First Fridays July 5
Three new art exhibitions and a solar-powered lighted installation on the square will welcome visitors to Fairfield First Fridays on July 5, 6 to 10 p.m. An opening reception for abstract work by three Iowa City artists opens at ICON Gallery, 58 N. Main St., 6:30–10:00 p.m. “Iowa City has a wealth of talented artists,” says ICON Director Bill Teeple. “Three veteran artists from that community are Laura Young, Nancy Purington, and Anita Jung, all abstract artists. However, no matter how abstract and nonobjective the art becomes, the work can’t escape reference to the outer and inner worlds. Their work hits you with a powerful aesthetic experience of color and form, but each also delivers deep poetic, emotional, and metaphysical content.”
