6-Ingredient No-Bake Oreo Pie Is the Perfect Summer Dessert

This no-bake Oreo pie is a quick and easy dessert that's a perfect way to cool off on a hot summer day. You only need six ingredients: a package of cream cheese, a container of Cool Whip, vanilla extract, sugar, Oreo cookies and a premade chocolate pie crust. The recipe takes about 15 minutes to make and a couple of hours to set in the refrigerator.

The taste of the softened Oreos contrasts wonderfully with the light, creamy filling and the crunchy chocolate crust. If you like Cookies & Cream ice cream you'll love this pie. The pie also looks beautiful. Serve it with a dollop of whipped cream on each slice, topped by a quarter cookie. Or buy a second container of Cool Whip and spread it over the pie then sprinkle the surface with cookie crumbs.

For this recipe, you don't want to use a rolling pin or a food processor to break up the cookies. I made this mistake the first time I made the pie and the crushed Oreo crumbs turned the filling brown, even after I folded in the whipped cream. It still tastes good this way, but the pie looks much better with the contrast between the dark Oreo chunks and the light filling. I usually just take a large knife and chop the the cookies into pieces. Or break them up by hand, since you only need 1 3/4 cup.

    No-Bake Oreo Pie

    Ingredients

8 ounces (1 package) cream cheese, softened

    1/4 cup granulated sugar

    1 teaspoon vanilla extract

    1 3/4 cups chopped Oreos

1 (8-ounce) container Cool Whip, thawed

    1 premade chocolate crust

Whipped cream and additional Oreos for garnish (optional)

    Instructions

    1. Using a hand-held electric mixer or stand mixer with a paddle attachment, mix the cream cheese, sugar and vanilla until smooth and creamy.

    2. Add the Oreos and mix in by hand with a spatula.

    3. Gently fold in the Cool Whip and mix thoroughly until combined. Transfer to the pie crust and spread filling evenly onto crust.

    4. Refrigerate at least 2 hours before serving.

    5. Garnish with whipped cream and more Oreos if desired.

    Notes

To speed things up you can use the freezer, but one of the best things about this pie is the taste of the softened Oreos--which gets better the more time you leave it in the refrigerator.

To cut down calories you can substitute sugar-free Cool Whip for the regular kind and use light cream cheese in place of the full-fat version.

You can also make your own Oreo crust. Use a food processor to crush 25 Oreo cookies and combine with 4 tablespoons melted butter. Press mixture into a 9-inch pie plate and refrigerate for about 20 minutes before adding the filling.

If the whipped cream isn't blending easily with the cream cheese Oreo mixture, it's fine to mix it on low a minute or so with the mixer.
