    The story about Birdie's Pimento Cheese

    When Robin "Birdie" Allen was growing up, she was fond of pimento cheese. She ate it often because eating a spoonful was easier than making a sandwich for a snack.

    Birdie started experimenting with pimento cheese in her 40s because store-brand pimento cheese was too bland for her taste.

    When Birdie was about to turn 50 in July 2014, she saw an opportunity to make and sell her own pimento cheese. She and her husband, Glenn, decided to sell three flavors of pimento cheese at a farmer's market just one day to see what it was like. They sold all the 30 tubs of cheese they had.

    Today, Birdie's Pimento Cheese is sold in eight bold flavors online, at farmer's markets, and in specialty retailers nationwide.
