One of the greatest bites one can experience on this planet is a slice of tender steak with a few hot, crunchy fries. The French call it steak frites. We call it a reason to get out of bed in the morning. The steak frites on this guide mostly come from some of the best French restaurants in Miami (plus a random Gables butcher shop that fries everything in beef tallow). And they are all glistening testaments to the enduring harmony of potato and protein.
A hanger steak might be our favorite cut to use in steak frites. It's juicy and has a lot of surface area to get nice and charred. La Fresa helps prove our theory with their delicious hanger steak, which is cooked with NASA-like precision. The Hialeah French spot also provides more than enough fries to ensure you will have some for every last bite of that steak. Because there is nothing more frustrating than running out of frites before you finish your steak.
Your steak frites journey at Café Pastis differs between lunch and dinner. If you’re having it for lunch, it comes with a thick puck of roquefort parsley butter—enough to spread an inch layer (we’re talking edge to edge) on the juicy hunk of ribeye. On the side are equal parts french fries and a lightly dressed salad you can enjoy between heavy mouthfuls of beef and fries. The dinner version comes au poivre. Maybe it's our deep love of all things butter, but we do prefer the lunch version.
Frenchie’s fries taste like McDonald’s fries with less grease. And this is a good thing. Fries aside, what really makes this steak frites special are two things: butter and salad. Frenchie’s uses a new york strip that’s seared hard on both sides, giving it a little crunch with each juicy bite. But it’s also topped with housemade garlic herb butter. Then there’s the Shannon salad (named after the owner’s ex) that’s always served with this dish. It’s refreshing, lightly dressed, and comes with lettuce, spinach, green beans, and tomatoes. Do as the French do and save it for a final palate cleanser.
In the world of steak frites, the fries usually play second fiddle to the meat. Not at Shadow Wagyu. The Coral Gables restaurant moonlights as a butcher shop and specializes in one thing: wagyu beef. That’s the only meat they use, and everything else that doesn’t moo is cooked in wagyu beef tallow—even the crunchy fries. Doing this gives them a richer flavor and makes them the perfect companion to Shadow’s tender 10oz wagyu skirt steak.
If you are loyal to filet mignon, then perhaps this Grove classic is your steak frites spot. That's the cut they use, and it's tender enough to slice with one of the crispy french fries next to it. It's also covered in au poivre, which could be a touch more peppery, but acts as a nice dipping sauce for the fries. It'll pair well with the free (yes, free) glass of sparkling wine they give every guest.
It is not the steak that has landed Wynwood's Pastis on this guide, but the frites. Pastis' steak options—new york strip, filet, and ribeye—are fine, if a little too pricey. We (and our wallets) liked it better when they offered a hanger steak option. But the Pastis fries are marvelous. They're golden, crunchy, hot, and pair well with the ice-cold martinis you should be drinking here (offered in miniature versions, because why the hell not).
