Since opening its doors last August, Daybreak Bistro in Millersburg has been enjoying a steady stream of satisfied customers who have been clamoring for more.

In an effort to the give the diners what they want, the restaurant is expanding its hours into the evenings Thursday through Saturday.

"We wanted to grow, and we soon realized that there is a whole other crowd that is not able to come in during the day because they work jobs just like we do," said Daybreak Bistro owner Brandon Hershberger. "We saw that we could open up to a whole new set of customers by opening in the evenings, and we saw that as an excellent opportunity to continue to grow."

Hershberger said the menu has expanded to include a few more burger selections to accommodate the dinner crowd. More entrée options will be added as the restaurant gets its footing, Hershberger said.

The burger board includes OG Smash Burger, The Burg, Mushroom and Swiss, The 1095 and a pulled pork burger.

The sandwich board includes a grinder, bacon, lettuce, tomato and avocado (BLTA), a Reuben, ham and cheese, pulled pork, crispy chicken and chicken club.

The restaurant also offers traditional or boneless wings and chicken strips, along with a selection of appetizers and a kids menu.

"We want to keep on expanding our menu to include some entrees, so there's a little more than burgers and sandwiches," he said. "We wanted to start with what we knew we were good at, (burgers) and not get overwhelmed. We're willing to try some new things and add some different menu items as we go.

"Our breakfast menu is still going strong and people are beginning to get the word that we're now open in the evenings on Thursday through Saturday," Hershberger added.
