    Baked Chicken With Bacon and Cheese

    Lunch today was simple—baked chicken with bacon and cheese. The preparation and cooking was easy. I didn’t want to use too many ingredients, so I kept it simple. Here are the ingredients.

    Ingredients

    • 2 - Chicken thighs (Deboned)
    • Salt
    • Pepper
    • Bacon
    • Cheese
    • 1 - Egg
    • Yellow Cornmeal
    • Flour
    • Cooking oil

    Instructions

    Remove the bone from the chicken thighs, and flatten the chicken with a meat hammer. Season the chicken with salt and pepper. Cut four strips of bacon and use any cheese in your refrigerator for the filling. Place two strips of bacon and cheese on each deboned thigh and tie them with a string to hold them in place.

    Use the egg as a binder and coat the chicken with yellow cornmeal. Dip the chicken again in the egg and dip the chicken a second time in flour. Fry the chicken in a frying pan until the crust forms. After frying the chicken for several minutes:

    • Put the chicken in a baking pan.
    • Cover it with foil.
    • Bake them for 35 minutes at 350 degrees.

    The chicken didn’t turn out greasy. Let it cool, and serve.

    Final Thoughts

    The bacon chicken with bacon and cheese was delicious. I would have added something spicy to the chicken because I like spicy food. But the baked chicken was easy to make. I removed the skin for this recipe, but I usually leave the skin because that’s the best part of a chicken meal.

    Be sure to remove the string to tie the chicken together before eating.
