    Simple Cream of Mushroom Chicken Meal

    I have rarely dined out since I moved to the countryside because I cook more at home. Here is a meal I haven’t made in a long time. Cream of mushroom chicken is easy to make. I sometimes write about what I cook at home. There are many versions of cream of mushroom chicken. Here is my version.

    Cream of mushroom chicken

    Ingredients

    • 3 pieces of chicken thighs (leave the skin on)
    • Hawaiian salt or sea salt
    • 2 cloves garlic
    • 1 tsp minced ginger
    • 2 eggs
    • flour
    • 1 can of cream of mushroom
    • Cooking oil
    • Potatoes (optional)

    Instructions

    Salt and season the chicken thighs with salt, garlic, and ginger. Scramble the eggs in a bowl to use as a binder for the flour. Use a frying pan to fry the chicken coated with flour until it forms a crust on both sides; when the chicken is about 1/2 or 3/4 cooked, drain some of the oil and add one can of cream of mushroom to the frying pan. Next, add a cup of water to the frying pan and let it simmer on medium heat for about thirty minutes. Taste the cream of mushroom sauce and add additional salt to season to your liking.

    Remove the pan from the stove, let it cool, and serve.

    Optional

    After frying the chicken, I also like to place it in a baking pan with sliced potatoes and then add the cream of mushroom to the baking pan. Add the water to the pan and bake it in the oven with aluminum foil for about 40 minutes at 350 degrees F.

    If I bake the mushroom chicken, I check it intermittently to make sure the chicken doesn’t burn.
