    Marathon County inspections: One restaurant has 11 violations, another has 10

    The following are the latest results of Marathon County Health Department inspections on licensed food establishments and other types of businesses, which the Wausau Daily Herald reports monthly.

    Athens

    • Cocina on the Square, 121 Alfred St.: May 17: Seven violations: Kitchen employee seen handling waste can, then retrieving ham from reach-in cooler, slicing it on deli slicer and placing on pizza without changing gloves or washing hands; raw shell eggs stored above container of mustard and chipotle sauce in reach-in cooler; date mark missing on a variety of stored foods; a number of food contact surfaces unsanitary; soap not available at food employee handwashing sink; walk-in cooler and counter hot-holding case lack thermometers; numerous non-food contact surfaces dirty.

    Marathon

    • 3 Amigos, 668 Maratech Ave.: May 13: Four violations: Date marking not present on some non-shelf stable food items (corrected during inspection); menu incorrectly designates some items as served not fully cooked, including the veggie burrito and chiles rellenos; food contact surfaces of fryer baskets, tongs and plastic dried food container dirty; non-food contact surfaces of dry storage bin, fryer basket handles, wire racks near cooks' line and equipment storage shelf dirty.
    • Pizza Market, 200 Main St.: May 21: Three violations: Sanitizer not used according to label instructions: person in charge not monitoring proper sanitizer techniques; packaged popcorn and candies missing net weights from labeling information.
    • Subway No. 134, 670 Maratech Ave.: May 14: Re-inspection: No violations.

    Marshfield

    • Baymont Inn & Suites, 2107 N. Central Ave.: May 7: Six violations: Items in countertop refrigerator not at proper temperature; no thermometer present for monitoring food temperature; no test kit available for checking sanitizer concentration; no certified food manager for establishment; inside of microwave, kitchen sinks and counters and outside of garbage can dirty; utensils stored on breakfast line where food or lip contact surface could be contaminated.
    • El Mezcal Mexican Restaurant, 2312 N. Central Ave.: May 6: Two violations: No working soap dispenser at bar handwashing sink; hot pans covered while cooling in the walk-in cooler.
    • JB Viaduct Bar and Grill, 1701 W. McMillan St.: May 14: One violation: no food protection manager's certificate posted in establishment.
    • Subway No. 117, 2001 N. Central Ave.: May 7: No violations.

    Mosinee

    • Mosinee Brewing Company, 401 Fourth St.: May 16: One violation: Test kit not available for checking sanitizer concentration (corrected during inspection).

    Ringle

    • Kluck's Callon Saloon, 6404 Marathon County J: May 30: No violations.

    Rothschild

    • Holiday Inn & Suites Wausau-Rothschild, 1000 Imperial Ave.: May 2: Five violations: Foods held in prep table not at proper temperature (corrected during inspection); person in charge not monitoring foods during cold holding; prep table No. 7 not sufficient in capacity to hold food at proper temperatures; test kit not available for testing sanitizer concentrations; No. 1 refrigerator and dorm-style refrigerator not certified.
    • Next Stop Lounge, 1106 E. Grand Ave.: May 22: No violations.
    • Politos Pizza of Rothschild, 315 E. Kort St.: May 20: No violations.
    • Subway No. 128, 1133 E. Grand Ave.: May 20: One violation: Beverages in soda cooler, including milk, not held at proper temperature (corrected during inspection).

    Schofield

    • Casa Amigos, 508 Grand Ave.: May 7: 10 violations: Pan of raw marinated beef stored directly above container of lemonade in walk-in cooler (corrected during inspection); top layer of portioned guacamole cups in open prep table cooler not at proper temperature (corrected during inspection); two sanitizer wipe buckets cold and had no sanitizer in them; variety of non-shelf stable foods lacking proper date marking in coolers (corrected during inspection); numerous food contact surfaces found dirty; cooling unit in walk-in freezer leaking directly onto cases of raw meat; large volume of tortilla chips stored in non-approved plastic containers; various non-food contact surfaces dirty; cleaned metal pans, drink cups and drink glasses stacked without being air dried; kitchen handwashing sink directly next to wire rack for storage of clean metal hotel pans (corrected during inspection).
    • Wasabi Teppanyaki and Sushi Bar, 3703 Schofield Ave.: May 16: Re-inspection: No violations.

    Spencer

    • St. John's Lutheran Church, 210167 State 13: May 28: No violations.

    Stratford

    • Country Aire, 118600 Marathon County P: May 6: One violation: Consumer advisory missing disclosure statement.
    • Sammys Shack, 122951 Balsam Road: May 8: No violations.
    • VFW Clubhouse, 213222 State 97: May 8, No violations.

    Wausau

    319 Bistro, 319 Fourth St.: May 29: One violation: Chicken in prep cooler not at proper temperature.

    Bob & Randy's Bar, 1515 N. Sixth St.: May 31: Six violations: Sanitizer concentration exceeds upper limits; open bottle of stomach medicine stored in cooler above white milk; non-shelf stable foods with past due dates, including hot pickle chips, sauerkraut, house-made drink mix and spicy aioli sauce; menu item incorrectly lists a number of poultry and seafood items as being offered undercooked; food contact surfaces dirty including flat top griddle, ice paddle, metal and plastic hotel pans, some squeeze bottles and probe end of thermometer; pressure measuring device on water supply line for fresh hot water sanitizing rinse on ware machine.

    Bull Falls Lounge, 901 E. Thomas St.: May 3: Two violations: No test kit for monitoring sanitizer concentration; soap not available at handwashing sink.

    Canteen Graphic Packaging, 200 Central Bridge St.: May 13: No violations.

    Dunkin & Baskin Robbins, 110 W. Bridge St.: May 23: Three violations: Employee put gloves on without washing hands; no single-use toweling or other hand-drying device at most employee handwashing sinks; daylight can be seen under exterior door in the storage room.

    Eagles Aerie 251, 1703 S. Third Ave.: May 30: Nine violations: Refrigerator in kitchen not at proper temperature (corrected during inspection); chlorine test kit not available for checking sanitizer concentrations: ice machine dirty; storage racks have wood or pressed board shelving that is not sealed; home style and prep table not equipped with thermometers; cavity of microwave dirty; Styrofoam cup lids and soup containers not stored in original container or properly protected; floor in back porch storage area not easily cleanable and cement wall has chipping and peeling paint where a rack of dishes is stored; floor under stainless cart next to grill dirty.

    Erbert & Gerbert's, 329 Fourth St.: May 24: Re-inspection: Five violations: Cutting board in sandwich assembly area has extensive gouging and staining that cannot be removed through cleaning; non-food contact surfaces dirty; no mop sink in facility; flooring in prep area cracked and chipped; exterior door in back room has gap.

    Jalapenos Mexican Restaurante, 300 Third St.: May 2: Two violations: Left food prep cooler not sufficient in capacity to hold proper temperature; hot water not available at handwashing sinks.

    Jim's Corner Pub, 1244 S. Ninth Ave.: May 28: No violations.

    King Buffet of Wausau, 358 S. 18th Ave.: May 13: Seven violations: Single-use plastic bowls used as scoops in sauces and dry ingredients (corrected during inspection); boxes of received chicken, potatoes and produce stored on floor in walk-in cooler; two-door prep cooler not equipped with permanently attached thermometer; thermometer in two-door cooler by fryer not easily readable; shopping take-out bags, plastic wash tubs and bus tubs not certified; drying racks across from ware washing sink lined with cardboard; left faucet at food prep sink cracked and sprays water everywhere.

    McDonald's Family Restaurant, 1205 W. Campus Drive: May 9: One violation: Sanitizer not used according to label instructions.

    McDonald's Family Restaurant, 2002 Stewart Ave.: May 8: Four violations: Cut tomato on the line cold rail was not at proper temperature; ware washing machine does not dispense sanitizer automatically (corrected during inspection); glass door cooler not equipped with permanently attached thermometer (corrected during inspection); lowboy drawers not equipped with a permanently attached thermometer (corrected during inspection).

    Milwaukee Burger Company, 2200 Stewart Ave.: May 31: 11 violations: Person in charge and other staff members unable to demonstrate knowledge of proper cooling times and temperatures; variety of non-shelf stable items found to be lacking date marking or bearing a date past the 7-day allowance; turkey burger on menu incorrectly designated as a product able to be served undercooked; assortment of wares damaged creating uncleanable surface and presenting potential physical hazard including multiple plastic pans, pitches and lids with melted areas, cracks or chips; various food contact surfaces were soiled including ice scoop in metal pan found sitting in standing water with food debris; several food items found uncovered in refrigerated storage including a pan of red sauce, tub of beer and butter sauce, pan of marinated cooked chicken breast, a pail of red cause and container of beer cheese sauce; several working containers of condiments and sauces not labeled with their contents; eastern side cold drawers lacking a thermometer; various non-food contact surfaces dirty including interior surface of east prep table cabinet; cleaned metal and plastic hotel pans and metal bowls stacked in an interlocking fashion without being air dried; receiving door unable to self-close and found left open.

    North Central Health Care Facility, 1100 Lake View Drive: May 20: Five violations: Cottage cheese and sliced ham not at proper temperature; person in charge not monitoring food during cold holding; cafeteria buffet line cooler not sufficient in capacity to hold foods at proper temperature; chicken and turkey wraps packaged for retail sale in Bistro do not list ingredients; employee touched food contact part of tongs when retrieving them from storage.

    Northcentral Technical College, 1000 W. Campus Drive: May 13: No violations.

    Van Acre, 151401 Marathon County NN: May 30: One violation: Can opener had accumulation of food residue and cutting board at the salad prep station was worn and stained.

    Weston

    • Chang Garden Weston, 4215 Barbican Ave.: May 29: Three violations: Person in charge not monitoring proper sanitization techniques; not using dedicated food prep sink for thawing product; multiple bottles on cooks' line and prep line not labeled with contents.
    • Marshfield Medical Center-Weston, 3400 Ministry Parkway: May 1: Two violations: Liquid soap containers stored over disposable aprons and paper toweling (corrected during inspection); cakes in the cafeteria for retail sale not labeled.
    • Osso Buco, 2601 Schofield Ave.: May 9: Two violations: Chicken and salmon not held at proper temperature (corrected during inspection); walk-in cooler set too high (corrected during inspection).
    • Subway No. 113, 6606 Marathon County J: May 21: Three violations: Undercounter cooler below toaster ovens not adequately cold holding; leak from beverage area with water pooling in dining area floor; toilet room doors not kept closed.

    Wittenberg

    • Shellshocked, 203550 State 49: May 15: One violation: Chlorine test kit not available for checking sanitizer concentration.
