    Easy Crispy Chicken Sandwiches with Mango Salsa Recipe Is So Deliciously Satisfying

    Sometimes I just need a really good fried chicken sandwich. The juicy chicken, the crispy coating, the bread — it’s all just so hearty and good! But occasionally I also crave a little extra flavor to complement the chicken. That was the inspiration for this delicious crispy chicken sandwiches with mango salsa recipe. To create it, we combined fried chicken with the creamy goodness of fresh mozzarella and the sweet freshness of mango salsa and put it on crusty Italian bread. It’s a great sweet and savory pairing with plenty of crunch.

    This sandwich is substantial enough for dinner yet it also makes an excellent lunch. Just add some slaw or fries and you’ve got yourself a complete meal! And while the mango salsa sounds fancy, it’s super easy to make. All you need is a tub of salsa and a fresh mango. Give this recipe a try, then leave us comment below.

    • ¼ cup all-purpose flour
    • 2 eggs, lightly beaten
    • ¾ cup plain dry breadcrumbs
    • 4 (4 oz.) thin-sliced boneless, skinless chicken breast cutlets
    • ¼ tsp. salt
    • 1/8 tsp. pepper
    • 2 Tbs. olive oil
    • ¼ cup diced mango
    • ½ cup drained fresh salsa
    • (16 oz.) loaf crusty Italian bread, halved lengthwise, cut crosswise into 4 pieces
    • 4 leaves romaine lettuce, torn
    • 4 oz. fresh mozzarella cheese, sliced

    Instructions

    • Heat oven to 425°F. Line baking sheet with foil. Place flour, eggs and breadcrumbs in separate bowls. Sprinkle chicken cutlets with salt and pepper; coat with flour, then eggs and breadcrumbs.

    • In 12" nonstick skillet, heat 1 Tbs. oil over medium-low heat. Add 2 cutlets; cook, flipping once, 3–4 min. per side. Drain on paper towels. Repeat.

    • Stir mango into salsa. Fill bread pieces with lettuce, chicken, cheese and salsa; place on baking sheet. Bake until cheese melts, 5 min.
