    ABOUT RESTAURANT INSPECTIONS

    This is a snapshot of the inspections conducted by the Marion County health department.

    Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.

    Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct 5 points, and priority foundation violations deduct 3 points. Violations recorded on consecutive inspections result in point deductions being doubled.

    Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be reinspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

    Refrigerated, ready-to-eat, potentially hazardous food has not been consumed within the required time period or is not properly date-marked, specifically: In the walk-in, undercounter bar reach-ins and prep table, observed various food past the seven-day disposition or not properly dated, including: opened heavy whipping cream, opened Clamato, opened half and half, opened bloody Mary mix, red sauce (Nov. 4), bagged fettuccine noodles (Nov. 13), cheddar cheese sauce (April 2), opened salsa and cut iceberg lettuce (April 8).     Food-contact surfaces are not clean, specifically: Flaky and dangling food build-up on middle rack inside the rib reach-in refrigerator. Point deduction: 3.

    Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: Kale leaves stored on the countertop measured 64 degrees Fahrenheit near the to-go prep area. Butter and sour cream in the to-go containers measured 61 degrees in shallow ice baths near the to-go station. Corn dogs are 43 degrees and potato skins 44 degrees stored in the shallow ice baths at the line reach-in refrigerator. Point deduction: 5.
