    Delicious Thai Chicken Burgers Recipe is Filled With So Much Flavor

    There’s nothing like a good burger, and some nights I really get a craving for one. Sure, I could go out to my local burger place and pick one up. But that gets to be expensive, especially when buying burgers for the family. To save money, I’ll make burgers at home instead. That way I can experiment, too. Instead of the usual beef burger, for instance, I’ll try something a little more exotic. That’s the concept behind this Thai Chicken Burgers recipe. My family loves Thai food and we love great burgers, and that gave us the idea of combining the two. It’s like getting twice the flavor and satisfaction in one mouthwatering meal.

    We even made these burgers a little healthier, though no one would ever know unless you told them. We use ground chicken and flavor it with ginger, soy sauce, lime juice and cilantro. Then we cook the burgers in a skillet — no grilled required, which means you can make them all year long! — and then top them with a slightly spicy peanut sauce and put them on a hearty roll with greens, tomatoes and carrots. This dish has everything: the rich juiciness of the burgers, the kick from the sauce and the fresh crunch from the veggies. Yum! It’s also really easy to make. Watch our video and see for yourself.     • ¼ cup reduced-fat chunky peanut butter
    • 2 Tbs. Asian chili sauce
    • 4 tsp. lime juice
    • 1 lb. ground chicken
    • 2 Tbs. chopped fresh cilantro + ¼ cup leaves
    • 1 Tbs. low-sodium soy sauce
    • 1 tsp. grated lime zest
    • 2 tsp. grated peeled ginger
    • 4 ciabatta rolls, split
    • 2 cups mixed salad greens
    • 2 small tomatoes, sliced
    • 8 carrot ribbons

    Instructions

    Line baking sheet with wax paper. Mix peanut butter, chili sauce, 1 Tbs. water and 2 tsp. lime juice; reserve. Mix chicken, chopped cilantro, soy sauce, zest, ginger and remaining lime juice. Shape into 4 (½" thick) patties. Transfer to baking sheet; cover. Chill at least 30 min.

    Coat large nonstick skillet with cooking spray; heat over medium heat. Add burgers; cook, flipping once, until no longer pink, about 5 min. per side. Fill rolls with greens, cilantro leaves, burgers, tomatoes, reserved peanut sauce and carrots.
