    Coborn’s plans to add Erbert and Gerbert’s to Otsego store

    An Erbert and Gerbert’s sandwich shop is being proposed for inside the Otsego Coborn’s, in the latest development at the grocery store campus.

    Erbert and Gerbert’s is planned for the space previously occupied as a pharmacy, according to City Planner Dan Licht. The pharmacy closed recently, merging with neighboring Coborn’s pharmacies in Albertville, Big Lake, Elk River and Ramsey.

    Coborn’s said in a press release that the restaurant will feature dine-in, pick-up, and drive-thru services.

    The Otsego City Council is scheduled to consider a request for a conditional use permit amendment related to the sandwich shop on March 11.

    Erbert and Gerbert’s, meanwhile, traces its roots to Wisconsin. The first location opened in 1988 in Eau Claire and has since grown to more than 80 locations across eight states, according to the company website. One recently opened in the Princeton Coborn’s.

    In Otsego, Erbert and Gerbert’s is part of an expansion of the Coborn’s store to provide for a larger assortment of products and wider shopping aisles as well as an expanded liquor store, according to a statement from Coborn’s.

    An 8,000-square-foot addition is being built onto the 42,460-square-foot Coborn’s store at 15700 88th St. NE. The grocery and liquor stores are open during construction, which is expected to continue through spring. A public grand reopening celebration will be planned for early summer.

    Also in the works for the Otsego campus is a 15,000-square-foot building designed for two retail tenants: Ace Hardware and Pet Supplies Plus. It will be built to the southeast of Coborn’s.

    Those two stores are expected to open in early summer, according to Coborn’s.
