    The Viral Recipe That Has Us Rushing to the Store to Grab Tomatoes

    Who doesn’t love an easy dinner ? What deters a lot of would-be home chefs from picking up the knife in the first place is the amount of time and labor that goes into some of our favorite recipes . And while it's pretty easy to hop on a delivery app and order takeout, there's really nothing like being able to whip up a quick, delicious dinner in your own kitchen.

    But when it comes to summer dinners, we have even less cooking patience than usual. It's hot and we're trying to soak up the last of that summer fun, which means that dinner needs to be super speedy. And that's why when we saw Meredith Hayden's most recent recipe pop up in our feed we saved it immediately.

    What Is 15-Minute Pasta Pomodoro?

    Hayden describes her viral Pasta Pomodoro as “the perfect post-beach summer dinner,” which to us means it's light and easy and breezy—so far so good. She uses angel hair pasta, fresh cherry tomatoes, garlic, olive oil, butter and chives to create this summer masterpiece, which even her dog approves of. The bulk of the cooking time (as it were) comes from bringing the pot of water to boil. Once the angel hair pasta goes in it only takes 3 to 4 minutes to cook up to a perfect al dente.

    How to Make the Viral 15-Minute Pasta Pomodoro

    Start by bringing a large pot of water to a boil. While the water comes to a boil, heat a large skillet over medium-high heat and add a generous glug of olive oil. Add in a few thinly sliced garlic cloves, give them a stir and let them cook until they're a bit softened. Add in some halved cherry tomatoes and stir (or toss if you have chef skill like Hayden) the tomatoes in the garlicky oil. Season with salt and let the tomato-garlic cook a bit until the tomatoes soften. It won't take long because you want the tomatoes to be somewhat soft but not completely broken down.

    At this point, the water should be boiling. Add some salt, followed by a package of angel hair pasta. When the pasta reaches al dente (about 3-4 minutes), use a pair of tongs to carefully transfer the pasta to the sauce in the skillet. Stir (or toss) the mixture until the pasta is coated, then add 2 tablespoons of butter and continue to stir until the pasta is saucy and glossy.

    After removing the skillet from the burner, stir in a big spoonful of pasta water. The starch from the water will help create a velvety sauce. Top with chopped chives and parmesan cheese and enjoy with or without your dog by your side.
