    Full Speed Chicken and Ribs Isn’t Slowing Down Now; Planning to Expand in 2025

    After recently making its debut, Full Speed Chicken and Ribs is already thinking about this future, with plans to expand next year .

    The latest concept from Scott and Bekke Holmes , the founders of Little Miss BBQ, recently opened at 513 E. Roosevelt Street, offering a limited but delicious menu featuring Southern and Nashville hot fried chicken, biscuits, pecan-smoked pork ribs, and pulled pork, plus a variety of sides and drinks. While the new eatery is only a week old, the owners are already thinking about the future, saying they want to open more locations next year. The exact areas and timeline for the new sites have yet to be revealed.

    “We’re really excited about bringing simple yet excellently executed Southern and Nashville staples to the Phoenix area and serving our guests in a fun and welcoming environment,” Holmes said in a news release. “What started as a brainstorm has developed into a concept that we feel can be recreated anywhere. We look forward to introducing Full Speed Chicken and Ribs to other areas of the Valley next year.”

    The idea behind Full Speed Chicken and Ribs came to the Holmes’ during COVID-19 in 2020. While having a massive craving for fried chicken, the duo made the fateful decision to bring the fryer home from Little Miss BBQ, put it on their back patio, and start learning how to make fried chicken. They quickly became obsessed and have since dedicated a lot of their time to the concept.

    The pork ribs at Full Speed are St Louis style and smoked in-house with pecan wood on a massive M&M Barbecue rotisserie smoker, then finished with a new hot honey barbecue sauce or without any sauce. The fried chicken is served either bone-in or tenders, which can be ordered in three different styles. Finally, the eatery offers delicious fluffy biscuits made with love.
