    Now, I know we’re all busy these days, but this hearty dish is perfect for those days when you want a home-cooked meal without all the fuss. Just set it up in your trusty crockpot and let it work its magic while you go about your day. Before you know it, you’ll have a delicious, savory meal ready to warm your heart and fill your belly.

    Old-Fashioned Crockpot Chicken and Gravy

    Ingredients

    • 3 lbs of bone in skin on chicken thighs
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1/2 tsp garlic powder
    • 1/2 tsp smoked paprika
    • 1/2 tsp onion powder
    • Optional: Mushrooms, your choice.
    • 4 TBSP butter, divided
    • 1/2 cup chicken broth
    • 1/3 cup all purpose flour
    • 1 cup milk
    • Parsley for garnish

    Directions

    1. Add the chicken to the crockpot and cover with all the spices. Put half of the butter on top of the chicken.
    2. Pour in the chicken broth. It seems like a small amount of liquid, but the chicken will release it's own juices into the pot.
    3. Cook on LOW for 4-5 hours, until the chicken falls off the bone.
    4. Transfer the chicken to a plate with a slotted spoon. Take the skin and bones out and discard them. Reserve all that chicken broth goodness in the crockpot. Shred the chicken, wait to add it.
    5. In a medium saucepan, melt the other two tablespoons in a medium pan. Whisk in the flour and stir constantly. The flour will start to turn brown and make a roux, or thick paste.
    6. Slowly whisk in a cup of the hot crockpot chicken juices, a little at a time, until all the flour and roux are dissolved. Bring it to a simmer for a few minutes until it thickens.
    7. Stir the milk into the hot crockpot liquid, add your gravy/roux mixture, and stir.
    8. Add the chicken back in, and season with salt and pepper to taste.
    9. Serve over mashed potatoes, rice, or buscuits. Serve hot.

    Variations:

    You can absolutely use white meat if you prefer. I do recommend getting skin and bone in, because that adds to the depth of flavor of the dish.

    You can put everything in a gallon bag the night before, then just toss it into the crockpot in the morning for a delicious meal that night.

    You can add any herbs, onions, garlic, potatoes, carrots.. whatever you want really. Get creative!
