    If you've never had Mississippi Mud Potatoes, boy, are you in for a treat! Making it's way around family reunions, potlucks and church luches for as long as my great grandma can remember, the dish get's its name from the way the cheese is brown and bubbly when you pull it out of the oven. Don't let that turn you off, however, as the fluffy russet, cheesy, creamy goodness of these potatoes has everything else you want: bacon.

    You can make this recipe ahead of time and just pop it in the oven whenever you are ready for a big ol' helpin' of Mississippi Mud Potatoes!

    Ingredients

    • Three pounds of russet potatoes (5 or 6)
    • One cup sour cream
    • One cup Mayo
    • Four cups of grated cheddar cheese
    • One package (one pound) of cooked and crumbled bacon
    • One tsp garlic salt
    • Pepper to taste
    • 1/2 cup finely sliced green onions

    Directions

    • Preheat the oven to 325°F. Chop potatoes into the desired bite-sized pieces.
    • Combine everything in a 9x13 dish, with a little bacon and cheese reserved for the top.
    • Bake for about 1 hour and 30 minutes, or until potatoes are soft and the cheese is bubbly and golden brown.
